Barrel-Rested Gin, like all our products, is hand-crafted at every stage of the distilling process.

First, we select the ingredients to create a balance of juniper and citrus notes.  

In distilling, as with so many things in life, the best results come with patience and after practice.

That’s how we now allow our gin to rest and age for just the right amount of time.

The flavors reach their optimum maturity and develop a deep, complex richness in the aged oak barrels.

The end result is a drink that has a unique and delicious astringency and looks very different from a typical gin.

Although, of course, it can be used as a base for cocktails, this is one to enjoy neat, over plenty of ice, or perhaps with just a splash of tonic.
